Seoul’s new breweries differ first in how they handle the past
Hangang Brewery revives the old Han River ferry landing that connected people and goods as the name of its first product. Seoul Fermentary says it creates new Korean drinks by disassembling and reconstructing tradition. One carries a vanished place name into the present; the other proposes a new genre by adding hops to takju (a cloudy Korean rice drink). Seoul’s new wave begins by reusing old things in different ways, not discarding them.
