Daegu makgeolli (a Korean fermented rice drink) lies between numbers and melon aromas

Choosing one Daegu bottle is more dramatic than it sounds. Dalseong Brewery presents Fogmag 7 as light and soft and Fogmag 10 as rich and distinct. Gunwi’s Hyang-eum Pyojun points in a completely different direction: rice sweetness, ripe chamoe (Korean melon) and melon aromas, and a weighty texture.

Masillog tasting note · How to choose among three bottles

Set the three bottles side by side: Fogmag 7’s chamoe and flower aromas, sweetness, and acidity; Fogmag 10’s creamy sweetness with yogurt and green-grape aromas; and Hyang-eum Pyojun’s rice sweetness with ripe chamoe and melon aromas. Start by choosing among a bright aroma, a rich texture, and ripe-fruit character.

Masillog tasting note · 7 and 10: the numbers are only the entrance

Both Fogmag bottles are 500ml, but their ABV and glutinous-rice content differ. Fogmag 7 is 7% ABV with 42.4% glutinous rice; Fogmag 10 is 10% ABV with 58.3%. External records are more nuanced than a simple “light versus rich” contrast. A sales-channel chart gives Fogmag 7 chamoe and flower aromas, sweetness, acidity, and a weighty impression. An independent Fogmag 10 tasting notes dense sweetness, creamy texture, and aromas recalling yogurt and green grape.

Masillog tasting note · Ripe-melon aroma from Gunwi

Hyang-eum Pyojun is a 12% takju (a cloudy Korean rice drink). The Farmers’ Newspaper describes rice sweetness, aromas recalling ripe chamoe and melon, and a weighty texture. It is a clear starting point for anyone who would rather choose by aroma than by Fogmag’s numbers.

Placing three bottles on a Daegu table

This is a Masillog editorial suggestion. Pair Fogmag 7 with minari jeon (a water-parsley pancake) with shrimp, Fogmag 10 with flat dumplings topped with spicy seasoning, and Hyang-eum Pyojun with Daegu-style jjimgalbi. Compare which dish brings forward the chamoe and flower aromas, creamy sweetness, or melon-like aroma.

An evening that begins with one address

Begin planning the Dalseong route from Dalseong Brewery at 10 Biseul-ro 208-gil, Nongong-eup, Dalseong-gun, Daegu, or the Gunwi route from Narin Distillery at 1282 Chisanhyoryeong-ro, Bugye-myeon, Gunwi-gun, Daegu. Do not link both in one day; save only the selected business address. Each is an address on an official site, not a guaranteed visitor destination. Confirm current visit and purchase options with the producer before departure, and leave the address off the itinerary if no confirmation is available. The real starting point is deciding between an evening with Dalseong’s 7 and 10 and an evening spent slowly reading one bottle at 12% from Gunwi.
